Instructions
- Preheat your oven to 375 degrees F. Prepare two muffin tins by greasing them or lining them with eco-friendly paper bake cups.
- In a medium mixing bowl, whisk together the flour, sugar blend, baking powder, and nutmeg. Create a “well” in the center of the dry ingredients.
- In a separate bowl, whisk the eggs, eggnog, melted butter, vanilla, and optional rum extract until smooth.
- Pour the wet mixture into the well of the dry ingredients. Stir gently until just moistened. Note: The batter should remain slightly lumpy; over-mixing can lead to a dense, tough crumb.
- Spoon the batter into the prepared muffin cups. For a classic “muffin top” appearance, fill the cups nearly to the top rather than the standard two-thirds.
- Evenly sprinkle the Nutmeg-Streusel Topping over the batter in each cup.
- Bake for 18 to 20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
- Cool in the tins for 5 minutes before transferring to a wire rack to finish cooling. Serve warm for the best texture.
Kitchen Tech Box:
Using a Non-Stick Muffin Pan [View on Amazon] ensures even heat distribution, which is critical when using sugar alternatives that can brown faster than traditional glucose.
Professional Notes
Storage: Keep muffins in an airtight container at room temperature for up to 3 days. To maintain the integrity of the streusel topping, place a paper towel inside the container to absorb excess moisture.
Freezing: These muffins are highly freezer-friendly. Wrap individual muffins in parchment paper and store in a vacuum-sealed bag for up to 2 months. Reheat in a 300″just-baked” crispness of the topping.
